Hello lovelies! Hope you are all having wonderful easter weekends! I have a recipe for you today, for (dairy free of course) chocolate maple cinnamon cupcakes!
The recipe part....
You will need:
1 cup butter
1 cup sugar
2 large eggs
3/4 cup flour
2 tablespoons good quality cocoa
2 teaspoons cinnamon
1 tablespoon maple syrup
Icing: Betty Crocker Chocolate Buttercream + 1 tablespoon maple syrup.
1. Mix the butter, sugar and eggs until nice and creamy.
2. Add the cinnamon, maple syrup and cocoa. Mix well.
3. Fold in the flour.
4. Bake at 180oC for about 15/20 minutes, or until you insert a knife into the cakes and it comes out clean.
5. While the cakes cool, mix the buttercream icing with the maple syrup, and spread onto the cakes when they are completely cool. Decorate with sprinkles of your choice!
I decorated them with little sugar flowers in spring colours for this easter weekend, in the hope to tempt spring along a little bit! Although the sun came out for a bit while the cakes were cooling, it was sleeting again by the time I'd finished decorating. Yuck.
