treat of the week: chocolate chip cookies

Hello lovelies!
In my opinion, nothing quite comes close to a good chocolate chip cookie.
My favourite are soft and chewy, with an almost doughy texture, and rich chocolate chips with just the right balance of sweetness. Living with food allergies means you can't just stop by your local shop to grab some, but that is probably a good thing, as with such a weakness for chocolatey chip goodness, I'd be obese by now. For special occasions though, or just when I am in need of a good cookie, here is my go to recipe for dairy free deliciousness!
Simple ingredients, and quick to make. You will need:
1 cup butter(non dairy substitute)
1/2 cup soft brown sugar
1/4 cup caster sugar
2 cups flour
1 egg
1tsp vanilla extract
1 tsp baking powder
1 1/2 cups dark chocolate chips (sainsbury's are good for chips without dairy!)
Combine the butter, sugars, egg and vanilla extract. Then mix in the flour and baking powder. Then stir in the chocolate chips. Simple!
Bake for 10-12 minutes until golden brown. Leave them to cool a little bit, as the chips turn into molten lava chocolate, and nobody loves a burnt tongue.
Pile them high on a plate, serve with a fresh cup of coffee, and try not to eat them all at once!
What is your go-to comfort baking recipe?
